A toolkit for cold chain requirements from supplier to distribution centre : a fruit and vegetable case

Abstract
ENGLISH SUMMARY: Food loss and waste are a growing concern globally due to its environmental, social, and economic impacts. It is estimated that one-third of food produced for human consumption is wasted or lost in South Africa annually, which equates to an estimated 10 million tonnes of food, and fresh fruit and vegetables account for 44% of the total food loss and waste. The alarming amount of fresh fruit and vegetable food loss must be investigated from upstream the supply chain, from the suppliers to the first distribution centres. Ensuring members in this section of the supply chain are well-educated and informed about the cold chain requirements that influence food loss motivates the need for this research to be conducted. The objectives of the research study can be divided into five categories. Firstly, the study aims to understand the functionality and procedures of a fresh fruit and vegetable supply chain, specifically from suppliers to the first distribution centres. Secondly, it aims to identify the stakeholders in this section of the supply chain. Thirdly, it aims to comprehend and categorise fresh fruit and vegetable products according to their cold chain requirements. Fourthly, it aims to identify and define the fundamental protocols and best practices that supply chain members can implement to ensure the effective handling, storage, and distribution of fresh fruit and vegetables. Lastly, by synthesising the inputs from the first four objectives, the researcher developed a toolkit to provide guidance and education to supply chain members on an operational level from a cold chain integrity and food loss perspective. The research study followed a deductive approach and was exploratory and cross-sectional in nature. An integration between quantitative data and qualitative data was used, which resulted in a mixed-method approach. The study made use of both primary and secondary data collection methods. Primary qualitative data was collected in the form of exploratory interviews during observations and semi-structured interviews with industry experts. Furthermore, this study used secondary qualitative data in the form of a systematic literature review and a stakeholder analysis. Secondary quantitative data were also used in the form of historical industry data and data from an independent trial conducted by the researcher. Research objectives were met successfully by answering all the research questions, and an operational toolkit was developed as the output of the study. The toolkit consists of four tools: namely, the fresh fruit and vegetable cold chain stakeholders and related processes, the fresh fruit and vegetable categorisation and cold chain requirements, the fresh fruit and vegetable handling, storage, and distribution protocols, and the fresh fruit and vegetable supplier onboarding checklist. Finally, the toolkit was validated by industry experts to ensure its reliability and validity.
AFRIKAANSE OPSOMMING: Voedselverlies en -afval is 'n groeiende bekommernis wereldwyd weens die omgewings-, sosiale, en ekonomiese impakte daarvan. Daar word geskat dat 'n derde van die voedsel wat vir menslike verbruik geproduseer word, jaarliks in Suid-Afrika vermors of verloor word, wat gelykstaande is aan 'n geskatte 10 miljoen ton voedsel, en vars vrugte en groente maak 44% van die totale voedselverlies en -afval uit. Die verontrustende hoeveelheid verlies aan vars vrugte en groente moet stroom-opwaarts in die voorsieningsketting ondersoek word, vanaf die verskaffers tot by die eerste verspreidingsentrums. Die versekering dat lede in hierdie gedeelte van die voorsieningsketting goed opgelei en ingelig is oor die koue-kettingvereistes wat voedselverlies beinvloed, motiveer die behoefte aan hierdie navorsing. Die doelwitte van die navorsingsstudie kan in vyf kategoriee verdeel word. Eerstens poog die studie om die funksionaliteit en prosedures van 'n voorsieningsketting vir vars vrugte en groente te verstaan, spesifiek vanaf verskaffers tot by die eerste verspreidingsentrums. Tweedens is dit daarop gemik om die belanghebbendes in hierdie gedeelte van die voorsieningsketting te identifiseer. Derdens beoog dit om vars vrugte en groente-produkte te begryp en te kategoriseer volgens hul koue-kettingvereistes. Vierdens beoog dit om die fundamentele protokolle en beste praktyke te identifiseer en te definieer wat voorsieningsketting-lede kan implementeer om die doeltreffende hantering, berging, en verspreiding van vars vrugte en groente te verseker. Laastens, deur die insette van die eerste vier doelwitte te sintetiseer, het die navorser 'n gereedskapstel ontwikkel om leiding en opvoeding te bied aan voorsieningsketting-lede op 'n operasionele vlak vanuit 'n koue-ketting-integriteit- en voedselverlies-perspektief. Die navorsingsstudie het 'n deduktiewe benadering gevolg en was verkennend en dwarssnittend van aard. 'n Integrasie tussen kwantitatiewe data en kwalitatiewe data is gebruik, wat gelei het tot 'n gemengde-metode benadering. Die studie het van beide primere en sekondere data-insamelingsmetodes gebruik gemaak. Primere kwalitatiewe data is ingesamel in die vorm van verkennende onderhoude gedurende waarnemings en semi-gestruktureerde onderhoude met kundiges in die bedryf. Verder het hierdie studie sekondere kwalitatiewe data gebruik in die vorm van 'n sistematiese literatuuroorsig en 'n belanghebbende-analise. Sekondere kwantitatiewe data is ook gebruik in die vorm van historiese bedryfsdata en data van 'n onafhanklike toets wat deur die navorser uitgevoer is. Die navorsingsdoelwitte is suksesvol behaal deur al die navorsingsvrae te beantwoord, en 'n operasionele gereedskapstel is as die uitset van die studie ontwikkel. Die gereedskapstel bestaan uit vier instrumente, naamlik die belanghebbendes en verwante prosesse van die koue-ketting vir vars vrugte en groente, die kategorisering en koue-kettingvereistes vir vars vrugte en groente, die protokolle vir die hantering, berging, en verspreiding van vars vrugte en groente, en die kontroleslys vir verskaffers van vars vrugte en groente. Laastens is die gereedskapstel deur kundiges in die bedryf gevalideer om die betroubaarheid en geldigheid te verseker.
